8th Dish Moqueca from Brazil


There were a couple of firsts with this recipe.

First time I’ve cooked with Fish during this challenge (not a big fan, we don't tend to eat too much fish) and more importantly the first time I’ve ever cooked with Coconut Milk. (If you’ve not tried Coconut Milk, it’s well worth a try.)


Ingredients

2lb white fish in cubes or filets.
½ cup coconut milk
2 tablespoon olive oil
2 tablespoon lime juice
½ teaspoon salt
1 chopped onion
1 clove garlic, minced
3 tablespoon parsley
2 tablespoon tomato paste
1 tablespoon pepper sauce
1 cup water









I did make a slight boob with this, and that is I used to much lime juice. In my defence I wasn’t sure how a couple of tsp of lime juice was going to marinate all the fish evenly so I added a lot more than I should have. Also I wasn’t sure if I was to disregard the juice after I’d done with marinating the fish so I simply added it to the pot. It overpowers the rest of the flavours somewhat.














As for the taste we gave it a 7 out of 10, but that was only because we're not big fish eaters. However, once this challenge is over I will cook this recipe again because of the mistake I made with the limes.
