Very
simple to make and the stir fry section tasted great, the problem was that I cooked
too much rice so when I combined the ingredients there wasn’t enough
juice/gravy to mix with the rice. As a result the dish was very dry.
Ingredients
150-200 g Mutton
250 g Rice (It just didn’t look like I had enough rice, so I cooked twice as much)
300 ml Water
2 tbsp Oil
2 large Onions (cut in half rings)
2 Garlic Cloves (Minced)
300-400 g Vegetables (Carrots, Bell Peppers, White cabbage etc., cut in stripes)
Salt and Pepper (to taste)

Method
Boil rice in water with a few drops of oil.
Cook on low flame and let the water level reach below the rice.
In a separate pan, sauté onions and garlic in oil.
Add other vegetables and stir fry.
Toss in the mutton and cover. Reduce to heat to low and cook for 15-20
minutes, or until the contents turn
tender. Stir occasionally.
Mix in the boiled rice.
Flavor with salt and pepper.
Serve hot.

This will
be another dish I’ll cook again once the challenge is over to see if I can
improve the flavour.
We found
the dish a bit bland, but I fully accept that it’s my fault for cooking too
much rice. However we as a family gave it 6.5 out of 10.
