14th Dish Maasems (Fatima's Little Fingers)from Tunsia

Almost half way there and so far we have a clear winner!

This is a great snack to serve at parties, so easy to make and so very very tasty.

This will become a family regular dish, but I think I’ll experiment a bit. Maybe swap the Parmesan for Mozzarella for a start but I don’t want to change too much this it loses the authenticity.

 Ingredients

2 Medium Hard Boiled Eggs -- chopped
1 Large Cooked Chicken Breast -- chopped
1/3 Cup Parsley -- chopped
2 Medium Eggs -- beaten
2 Tablespoons Parmesan Cheese -- grated
Salt And Pepper -- to taste
9 Or 18 Wrappers -- see note
Olive Oil -- for frying
Lemon Wedges -- for garnish

NOTES: wrappers can be: 9 medium egg/spring roll wrappers or 3 Filo sheets

Method

In mixing bowl, combine both types of eggs, chicken, parsley, cheese salt and pepper. Refrigerate 30 minutes.
Wrap mixture in wrappers, sealing edges with water.
Fry in 1 inch oil until crisp.
Turning as needed.
Serve garnished with lemon wedges.

We gave it a 9 out of 10 but that was only because I added too much salt. I’m sure once I’ve perfected this it’d get the maximum everytime.
